After harvest, the mangoes are rested in a cool, shaded haven for five days to settle and breathe. They are then gently placed in layers, nestled in traditional wicker baskets, and allowed to ripen using age-old, natural methods involving sand and straw (HAY). The heat they generate helps each fruit reach peak ripeness — slowly, steadily, and beautifully.
